Instead, there is a data cache on the DAQ card, which is then read in batches, so it is naturally read in arrays.

If you make your own DAQ card, there is no caching, and the data is read in a single way, then you can use the queuing function in LabVIEW to do the caching, and then generate the array in the batch readout.
