Zhouzhuang is Wanshan hoof, its origin is as follows: braised pig's trotters are also called "Wanshan pig's trotters", there is a legend about the origin of "Wanshan pig's trotters", it is said that Zhu Yuanzhang in order to make things difficult for Shen Wanshan, the richest businessman in the south of the Yangtze River, proposed to eat this pig's trotters.

However, the pig's trotters processed locally are very hard and can only be eaten if they are cut with a knife, and they cannot be used with knives or sharp weapons in front of the emperor. Shen Wanshan came up with a way to take the finished pig's trotters home and simmer them over low heat until the meat was very soft, and as long as he touched it lightly, he could separate it. Because Shen Wanshan's money was much more than that of Emperor Zhu Yuanzhang, Zhu Yuanzhang wanted to harm Shen Wanshan, and Zhu Yuanzhang asked Shen Wanshan to invite the emperor and empress to dinner.

Zhu Yuanzhang suddenly pointed to the pig's trotters and said to him, "What kind of dish is this?" If Shen Wanshan is a "pig's trotter", and "pig" and "Zhu" have the same sound, isn't that eating the emperor's feet?

must have offended the emperor, and it is not impossible for the emperor to condemn him to death! At this time, Shen Wanshan hurriedly changed his words and said: "This is 'Ten Thousand Mountain Hoof', please taste it to the emperor."

In this way, Shen Wanshan resolved this life-and-death exam question, so that Zhu Yuanzhang could not do harm. And that dish: braised pig's trotters was therefore renamed "Wanshan pig's trotters".

The origin of Tongli Zhuangyuan's hooves: "Zhuangyuan's hooves" are actually "braised pig's trotters", which can be called "leaders" in various special snacks in Tongli Ancient Town.

Regarding the origin of the "champion hoof", there are two versions among the people.

One theory is that Fang Qing of the Ming Dynasty was despised by his aunt because of his family's downfall. One day, he walked to a small food stall on Ming and Qing Dynasty streets, and he was hungry and poured everything he had, bought a braised pig's trotters, and praised its taste after eating. The stall owner stepped forward and said to the other party:

Congratulations. Fang Qing asked puzzledly: "What is the joy?"

The stall owner said: "'Hoof' and 'Question' have the same sound, you have eaten this pig's trotter, and the title of the deposit list is inscribed." Fang Qing laughed when he heard this, and he didn't think so.

Soon, this poor talent turned out to be a real gold list title and a high school champion. When he returned to Tongli to marry his cousin, he first gave a heavy gift to thank the stall owner. Since then, the braised pig's trotters have been known as "champion trotters" and have become a famous food in Tongli and even Wujiang.

There is also a saying: According to legend, Song Chunyou was the champion of Wei Ruxian High School in the fourth year of his life. Wei Zhuangyuan especially likes to eat braised hooves.

In the Guangxu period of the Qing Dynasty, Ren Lansheng, the owner of the Retreat Garden, admired Wei Zhuangyuan, and specially hired a celebrity chef to cook braised hoofs as the main dish of the family banquet, which was nicknamed "Zhuangyuan Hoof". Use the old soup in the pot, add rock sugar to fry into sugar color and then mix into fresh soup, but also add cooking wine, ginger, garlic, spices, salt, soy sauce and other seasonings, cook slowly over fine heat, master the softness and hardness after stewing, until the red light is shiny, the appearance is moist, the meat head is crisp and soft, and the taste is mellow, and it is "done".

Ten thousand three hooves is a specialty of Zhouzhuang, the ancient town of Kunshan.

Nanjing has it in Confucius Temple, there are more things there, but it's a bit messy, so the quality is not the same.

I recommend going to Tongli, Tongli is the largest ancient town in the south of the Yangtze River, a typical land of fish and rice, and the retreat garden next to it I think is the most classic garden in Suzhou, which is worth seeing, and compared to Zhouzhuang, the commercial taste is not so strong.

Tongli is in Wujiang, Suzhou, and it is very convenient to eat and live, I don't know where you are starting from? After arriving in Suzhou, buy a bus ticket to Tongli at the bus station next to the train station, 8 yuan, an hour to arrive, if time permits, come back early and go to the Humble Administrator's Garden and Suzhou Museum, which are relatively close to the bus station.
