Jujube is made from fully ripe fresh jujube, which is the dried product with the largest processing capacity, the simplest method and the most widely used jujube in China.
The drying methods mainly include drying method, sun drying method, baking method and dryer drying method. In addition, in recent years, new methods such as freeze sublimation drying method, microwave drying method, far infrared drying method, and solar drying method have been newly developed. Either way, the fresh dates used should be harvested and graded when they are fully ripe.
To improve quality, blanch in boiling water for 5 to 10 minutes before drying.
Drying method: Hang the fresh jujube stall in a dry and ventilated place, and turn it once every 1 3 days, so that the jujube gradually loses moisture and becomes a dried jujube. This method is suitable for areas with many rainy days during the harvest period and varieties with thin flesh and coarse texture.
The jujube obtained by this method is bright in color, relatively full in appearance, less wrinkles and lighter, and more beautiful.
Sun-drying method: choose a dry, flat and ventilated place to set up a drying field, and spread it on the brick with sorghum stalks, about 20cm from the ground, as a jujube shop. The jujube is spread into a high and low tile ridge shape, evenly spread on the jujube shop for exposure, the thickness is 6 10cm, 30 50kg per square meter of pavement is paved, and it is turned once every 1 hour or so to dry evenly up and down.
At night, they are piled up in the middle of the bunks and covered with mats to protect them from dew and rain. If the weather is clear, it can be dried in 10 days.
Baking method: Generally, a special baking room with coal and other raw materials should be built. The various forms of baking rooms are composed of several parts, such as a heating system, a ventilation and dehumidification system, and a loading system.
The baking method is to grade the fresh jujubes according to their size and maturity, pick out the rotten jujubes, and put them on the shelves respectively, with a thickness of 2 layers. Once plated and on the shelves, close the door and exhaust pipe and start baking. The whole baking process is divided into three stages: heating, evaporating water and drying.
During the heating phase, the temperature of the oven should rise slowly and steadily to 55; In the evaporation stage, the temperature is raised from 55 to 65 68, but should not exceed 70, and it is maintained for 8 10 hours; In the drying stage, the temperature in the oven is lowered to 55 for 4 to 6 hours. The whole stage is damp 1 2 times. In the later stage, pay attention to the selection of jujube plates that meet the drying requirements and leave the room at any time.

Open the mat and ventilate for 3-4 hours a day.
Second, there are four points to pay attention to:
1. The fire of boiling water should be strong, and the fire should be strong, so that the water for boiling the dates will be boiled quickly, or the dates will not be fresh if they are not soaked for a long time;
2. The mat for drying dates should not be spread on the ground, but should be supported underneath and the mat should be elevated to ensure its air permeability;
3. The dried dates should be turned over from time to time to dry evenly;
4. It is necessary to boil the water to scald, this process kills some germs and makes the dates not easy to rot.
