The first thing to know is what espresso is, what does it need, and what are the standards?

The main explanation is the personnel factor.
In the case of the same equipment and water source, the personnel operation is prominently important, mainly three variables will affect the quality of a cup of coffee, the thickness of the coffee powder, the amount of coffee powder, and the strength of the pressed coffee powder.
The coffee powder is too coarse, the coffee powder is too little, the pressure is too light, the density of the coffee powder is too low, the contact time between the extracted boiling water and the coffee powder is too short, the extraction is not sufficient, the color is light, the coffee oil is white, the coffee taste is basically absent, the coffee flow rate is fast, and vice versa.
Observe the flow rate of the coffee when extracting the coffee, and know how to adjust it if it is too fast or too slow, so that the extraction is sufficient (I personally think that the tail of the little mouse is just right).
A good cup of espresso grease is dark golden yellow, very heavy, the cup is tilted at 45 degrees, the grease layer will not reveal the black coffee liquid, the coffee is relatively heavy, and the faint aftertaste of coffee will remain in the mouth within ten minutes.
