Microbial molecular detection, microbial breeding, brewing technology, fermentation engineering, new energy, new food resources and food ecological tourism engineering, etc. Innovation: It is the first to apply culture-free molecular biology technology to the scattered sail analysis and classification and identification of microbial community structure in the field of traditional brewed fermented foods in China, including DNA polymerase chain reaction (PCR), DNA denaturation gradient gel electrophoresis (DGGE technology), ribosomal small subunit gene cloning and phylogenetic analysis technology, etc. He took the lead in proposing the concept of microecology of liquor, and systematically studied the flora composition of fermented grains, cellar muds, Daqu and environmental microorganisms of strong aromatic liquor and their correlation with the changes of material composition. He took the lead in putting forward the concept of food industry ecology, and is committed to the cross-integration of food science and life science and the development of academic ideas of ecological food engineering through teaching, research and academic exchanges.

He has successively won the first and second prizes of Shandong Provincial Social Science Outstanding Achievement Award and the third prize of the 3rd National University Humanities and Social Science Outstanding Research Achievement Award. He has undertaken 6 projects of humanities and social sciences of the Ministry of Education, national education science planning, natural science projects of Shandong Province and international cooperation projects.
